Chili butter chicken and butternut squash

Looking for a perfect healthy fall dish with tons of flavor?

This has become one of my favorite go to lunches and dinners! The flavors of the sauce and the squash come together in this sweet, spicy unison that explode in your mouth. The texture of the chicken and squash give the dish substance, so you know your getting a hearty meal. And…by using enough butter and avocado oil, it boasts ketogenic macros! And if all of that wasn’t enough, its really easy to make!

RECIPE

INGREDIENTS FOR CHICKEN

2 cups Onion, chopped

5 cloves Garlic, minced

4 tablespoons Butter or vegan butter (for dairy-free)

2 pounds Chicken thighs, boneless, skinless, cut into bite-size pieces

15 ounces Tomato sauce, no added sugar

3 tablespoons Tomato paste

2 tablespoons Red curry paste

2 teaspoons Garam masala

1 1/2 teaspoons Ground ginger

1 teaspoon Salt

½ teaspoon Smoked paprika

1/2 cup Heavy cream or full-fat coconut cream (for dairy-free)

Cilantro, garnish

2 teaspoons chili powder, or more to taste

BUTTERNUT SQUASH

1-2 lbs of pre-cut butternut squash cubes

Garlic salt (to taste)

Pepper (lots)

DIRECTIONS

SQUASH: Preheat oven to 350F. Put 1-2 lbs of butternut squash cubes (pre-cut saves you much hassle!) on baking sheet covered with parchment paper. Season with garlic salt and pepper and drizzle with avocado oil. Put into the oven!

CHICKEN: Warm pan to medium heat. While heating, season chicken with salt and pepper. Mix all the ingredients besides the chicken, salt, and pepper in a bowl. When pan hot, add butter and add chicken. Let it cook for a couple mins, stirring until the chicken gets a little brown or a little crisp. Then pour the sauce mixture in and let cook for 1-2 minutes at that heat before reducing heat. Let simmer for 15-20 minutes or until the butternut squash is done!

SQUASH: After at least 20 minutes, they should start getting a good brown on the outside. Keep checking with a fork every 5-7 minutes until they get soft, or to the desired texture.

Wa-Laa! Plate them together side by side or all together and enjoy with a Supercharged Keto Golden Milk and/or a big glass or water.
